I used to do the same thing. I had waist length hair and I would always braid it, and it would be frizzy or poofy. Honestly, I got my hair cut, just a little shorter since short hair is so much easier to care for. I wake up, wash my hair and when it was slightly longer, pull it back in a loose ponytail to dry and it would be straight. I would use antifrizz serum (John Frieda Frizz Ease). If I wanted my hair to be natural, I apply the frizz ease, then apply gel or mousse and scrunch. I never touch my hair until it drys and its wavy/curly. You can also blow dry it this way if you want it to dry faster, but I rarely use a blow dryer on my hair.
Now, I have my hair cut short. I have chin length hair and I can blow dry it straight (my ends still flip out, which is kind of cute), like today, get it wet, add some gel and scrunch. I allow my hair to look messy, since that is so much easier then aiming for neat hair.
Now for up do's, people say I am amazing at them and I can do them under 5 minutes (it takes practice, but once you get the hang of it, its simple). For longer hair, try pulling your hair back in a ponytail with a clear elastic. Take a smal lsection of hair and twist it around and pin it. Take another small section and do the same in the opposite direction. Keep alternating and pinning until all your hair is twisted. Should form a nice, loose bun, and hair sticking out is more then ok, it is what I aim for!
This works with wet hair too, better if it is slightly damp, but either works. Take your hair in one hand, grasp and twist as you pull up on it to form a twist in the back. Use the other hand to pin hair as needed to hold. Pin back any hair that may be out of place as well, that maybe you missed. Again, messy is ok and it takes practice, but it also helps for when your hair dries, it tends to be straight mostly, with a little wave to it.

for starters, you could try to wear your hair down just plainly straightened or curled. you could then try to pin you bangs up some days or wear a colorful headband on others. also try hair clips from conair and clip half of your hair together (while having it straight or curly).

Scrunching it is pretty easy, but it works best if it's wet.
You could french braid it the night before and have it wavy the next day.
